September always feels like a reset—back to routines, school nights, and packed schedules. September nights call for meals that are both cozy and practical.

These weeknight-friendly recipes are quick to prep, require minimal cleanup, and bring all the comfort without needing the oven (besides a quick broil for the carnitas—worth it!).

☕ Recently, I’ve been loving sipping my morning matcha out of these pumpkin mugs. Little things like this bring me so much joy, and they make the busy weeks feel just a bit cozier.

Creamy Chicken & Rice

This recipe is a one-pot wonder, but it’s also super easy to customize! Swap in seasonal veggies for a vegetarian version, try it with shrimp or sausage for a new twist, or spice it up with red pepper flakes for a little kick.

Tuesday

Air Fryer Greek Chicken Skewers

You can also swap chicken thighs for chicken breasts (especially if you have leftovers from Monday). Just keep an eye on the cook time since breasts finish a little quicker.

Wednesday

Mexican Street Corn White Chicken Chili

There’s really no right or wrong way to enjoy this chili—it’s all about the toppings! Keep it simple as is, or load it up with your favorites.

I love adding crispy bacon crumbles, crunchy tortilla strips, jalapeño slices, creamy avocado, cotija cheese, or shredded cheese.

Thursday

Panko Crusted Salmon

Try it with other fish like cod, pollock, tilapia, halibut, or mahi mahi—the crispy panko coating works beautifully with all of them.

Saturday

Creamy French Onion Pasta

Want to make it vegetarian? Just swap the beef broth for vegetable broth.

Or give it a protein boost by adding pan-seared chicken on top for a hearty, balanced meal.

Friday

Crispy Crockpot Carnitas

Pickled red onions are delicious with these Crispy Carnitas. The tangy and sweet flavors play off of each other perfectly.
